For those unfamiliar with our culinary dynamics, Dan is decidedly not plant-based. If you’ve been following Flora & Vino for a while, you know my love affair with cauliflower runs deep. I opted for the original, but feel free to experiment – perhaps a zesty herb or a smoky barbecue flavor could add an exciting dimension to your steaks! Perhaps the most challenging, yet crucial, part of preparing this meal is cutting the cauliflower heads into uniform “steaks.” Achieving beautiful, thick slices is key to their steak-like appeal and ensures even cooking. Depending on the size and shape of your cauliflower heads, the number of full, perfect “steaks” you can yield will vary. For instance, I was only able to get four substantial slabs from two heads of cauliflower, primarily because mine had fairly narrow stalks. The goal is to maximize the flat surface area for that delicious cracker coating.

To cut them effectively, first, rinse your cauliflower and remove any outer leaves. Stand each head upright on its stem and, using a sharp, large chef’s knife, carefully slice it in half down the center. Then, working from the center of each half, cut 1-inch thick “steaks.” The trick is to keep the core intact for each slice, as this holds the florets together. Don’t worry about the florets that inevitably fall off or are too small to form a proper “steak” from the sides – absolutely save them! These leftover florets are incredibly versatile. You can roast them separately for a delicious side dish, or even better, coat them in the same almond milk batter and cracker mixture to create delectable “cauliflower tots” or bite-sized nuggets, perfect for a snack or a fun addition to the main meal.

Description

Creative veggie-centric “steaks” made with cauliflower and a crave-able cracker coating. Oil-free, gluten-free, grain-free and packed with flavor.


Ingredients

  • 2 large heads of cauliflower, rinsed and outer leaves removed
  • 1 package Jilz Crackers or 1 1/2 cups of your favorite cracker (gluten-free and grain-free as needed)
  • 1/2 tsp dried basil
  • 1/2 tsp oregano
  • pinch of Himalayan sea salt
  • 1/4 tsp garlic powder
  • 1/4 tsp crushed red pepper
  • 1 cup unsweetened almond milk
  • 3/4 cup almond flour
  • 1 TBSP lemon juice
  • For serving: parsley, lemon, your favorite dip


Instructions

  1. Preheat the oven to 400°F (200°C) and line a large baking pan with parchment paper to prevent sticking.
  2. Prepare the cauliflower: Stand each rinsed head of cauliflower on its stem. Using a sharp, large chef’s knife, carefully cut it in half down the center. From the center of each half, slice as many 1-inch thick cauliflower “steaks” as possible, ensuring the core holds each slice together. Any florets that fall off the sides can be saved for another dish or coated with the batter and cracker mixture to make delicious cauliflower tots!
  3. Prepare the cracker crust: Add your chosen crackers to a food processor or high-speed blender. Pulse until they form a fine, breadcrumb-like meal (refer to the photos for desired consistency). Transfer the cracker crumbs to a shallow bowl and mix in the dried basil, oregano, a pinch of Himalayan sea salt, garlic powder, and crushed red pepper flakes. Stir until all the seasonings are evenly distributed.
  4. Prepare the batter: In another large, shallow bowl, whisk together the unsweetened almond milk, almond flour, and fresh lemon juice until you achieve a smooth, slightly thick batter. Ensure there are no lumps.
  5. Coat the cauliflower steaks: One at a time, dip each cauliflower “steak” into the almond milk batter, making sure it is thoroughly coated on all sides. Gently lift the steak, allowing any excess batter to drip off. Immediately transfer the battered steak to the cracker and herb mixture. Carefully flip and press the cracker crumbs onto all sides of the cauliflower until it is completely and evenly coated. Finally, transfer the coated steak to the prepared baking sheet. Repeat this process for all remaining cauliflower steaks.
  6. Bake to crispy perfection: Place the baking sheet in the preheated oven and bake the cauliflower steaks for 20 minutes. After 20 minutes, carefully flip each steak to the other side (they will be delicate) and continue baking for another 20 minutes, or until the cracker crust turns golden brown and a fork can easily slide through the cauliflower, indicating it’s tender.
  7. Serve immediately: Serve the warm cauliflower steaks with a squeeze of fresh lemon and a sprinkle of fresh herbs like parsley. These pair wonderfully with your favorite roasted veggies, mashed potatoes, or a light green salad, along with your choice of dips or sauces.
  8. Storage: While best enjoyed fresh, leftovers can be stored in an airtight container in the refrigerator for 2-3 days. Reheat in the oven or an air fryer for best crispness.
